I have an avid interest in food and started my career as a chef. Being creative in the kitchen and coming up with new combinations of ingredients still excites me. Over the years I qualified as a paramedic and work with the national ambulance service in west Cork. Being out in the community helping those in need, I saw the need for further care after I said “good bye” to the patients at the emergency department. I believe the balance of my love of food and working on the front line in the healthcare system seemed to lead me organically into herbalism. I love the thought of being able to heal with food and herbs, while being able to pass on this knowledge to others.
